  • 4 pieces boneless, skinless chicken breasts the perfect base for absorbing all that delicious marinade

  • 2 tbsp olive oil keeps the chicken moist and adds rich taste
  • 2 tbsp honey a touch of sweetness that balances the spice
  • 3 cloves garlic minced
  • 1 tsp chili powder for that warm, spicy kick

  • 1/2 tsp salt enhances all the flavors
  • 1/2 tsp black pepper for a bit of heat

Method
 

  1. Step 1: In a large bowl, whisk together the lime juice, olive oil, honey, minced garlic, chili powder, cumin, salt, black pepper, and lime zest until well combined.
  2. Step 2: Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Step 3: Preheat your grill or stovetop grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.
  4. Step 4: Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  5. Step 5: Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
  6. Step 6: Garnish with fresh cilantro if desired and serve with your favorite sides.

Notes

Store cooked chicken in an airtight container in the refrigerator for up to 3 days. You can also freeze it for up to 3 months. Just make sure to wrap it tightly to prevent freezer burn.
