- Step 1: In a large bowl, whisk together the lime juice, olive oil, honey, minced garlic, chili powder, cumin, salt, black pepper, and lime zest until well combined.
- Step 2: Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- Step 3: Preheat your grill or stovetop grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.
- Step 4: Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
- Step 5: Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Step 6: Garnish with fresh cilantro if desired and serve with your favorite sides.
Notes
Store cooked chicken in an airtight container in the refrigerator for up to 3 days. You can also freeze it for up to 3 months. Just make sure to wrap it tightly to prevent freezer burn.
