- Step 1: In a large pot, heat the olive oil over medium heat.
- Step 2: Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute.
- Step 3: Stir in the roasted and chopped poblano peppers, cooking for another 2-3 minutes.
- Step 4: Place the chicken breasts into the pot and pour the chicken broth over them. Bring to a simmer.
- Step 5: Add corn, cumin, smoked paprika, salt, and pepper. Stir to combine.
- Step 6: Cover the pot and let it simmer for about 20-25 minutes, or until the chicken is cooked through.
- Step 7: Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Step 8: Stir in the heavy cream and let the soup heat through for about 5 minutes.
- Step 9: Ladle the soup into bowls and garnish with fresh cilantro. Serve with lime wedges on the side.
