- Step 1: Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Step 2: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Step 3: Beat in the eggs one at a time, followed by the vanilla extract. Mix well after each addition.
- Step 4: In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
- Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Step 6: Fold in the diced apples, caramel bits, and nuts (if using).
- Step 7: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Step 8: Bake for 10-12 minutes, or until the edges are lightly golden.
- Step 9: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
