Ingredients
  

For the Cherry Garcia Cookies
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 cup dried cherries or cherry-flavored dried fruit
  • 1/2 cup chopped walnuts optional

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Step 2: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Step 3: Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Step 4: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Step 6: Fold in the chocolate chips, dried cherries, and walnuts (if using) until evenly distributed throughout the dough.
  7. Step 7: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Step 8: Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked; they will firm up as they cool.
  9. Step 9: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

These cookies are best enjoyed fresh, but you can store them for later! Keep cookies in an airtight container at room temperature for up to a week. For longer storage, freeze the cookies in a single layer and then transfer them to a freezer-safe bag. They can last up to three months!
