- Step 1: In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10-15 minutes, or until they are tender and golden brown. Stir occasionally to ensure even cooking.
- Step 2: Toss in the chopped onion and bell pepper to the skillet with the potatoes. Cook for an additional 5-7 minutes, or until the vegetables are softened.
- Step 3: In a mixing bowl, crack the eggs and whisk them together. Season with salt and pepper to taste.
- Step 4: Pour the whisked eggs over the potato and vegetable mixture in the skillet. Gently stir to combine everything.
- Step 5: Once the eggs start to set, sprinkle the shredded cheddar cheese on top. Continue cooking for another 2-3 minutes, stirring occasionally, until the eggs are fully cooked and the cheese is melted.
- Step 6: Remove from heat and garnish with fresh chives or parsley if desired. Serve hot and enjoy!
Notes
If you have leftovers, store them in an airtight container in the refrigerator for about 3-4 days. Reheat in the microwave or on the stove until heated through.
