- Step 1: Prepare the Corn: If you're using fresh corn, shuck the ears and carefully remove the kernels. Canned or frozen corn works just as well if that's what you have!
- Step 2: Mix Dry Ingredients: In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, black pepper, paprika, and cayenne pepper if you want that extra kick.
- Step 3: Combine Wet Ingredients: In a separate bowl, beat the eggs and stir in the buttermilk. Then add the fresh corn kernels, chopped cilantro, and feta cheese if you're using it.
- Step 4: Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix gently until just combined. Remember, it's okay to have a few lumps; overmixing can make them tough!
- Step 5: Heat the Griddle: Preheat your Blackstone griddle over medium heat. Add enough vegetable oil to coat the surface.
- Step 6: Cook the Fritters: Once the oil is hot, drop spoonfuls of the batter onto the griddle. Flatten them slightly with the back of a spatula. Cook for about 3-4 minutes on each side until they are golden brown and crispy.
- Step 7: Drain and Serve: Remove the fritters from the griddle and place them on a paper towel-lined plate to soak up any excess oil. Serve them warm with your favorite dipping sauce or a squeeze of lime. Enjoy!
Notes
Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, pop them in the oven or air fryer for a few minutes to regain their crispiness. These fritters also freeze well! Just make sure to separate them with parchment paper and store in a freezer-safe bag for up to 2 months.
