- Step 1: In a large mixing bowl, combine the olive oil, soy sauce, honey, garlic powder, onion powder, smoked paprika, black pepper, salt, and lemon juice. Whisk until well combined.
- Step 2: Add the bite-sized salmon pieces to the marinade. Gently toss to coat all pieces evenly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
- Step 3: Heat your Blackstone griddle over medium-high heat. Allow it to get hot for about 5-10 minutes.
- Step 4: Once the griddle is hot, place the marinated salmon pieces on it. Cook for about 2-3 minutes on each side, or until the salmon is cooked through and has nice grill marks. Be careful not to overcook.
- Step 5: Remove the salmon bites from the griddle and transfer them to a serving platter. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
Notes
These salmon bites are best enjoyed fresh, but if you have leftovers, you can store them in an airtight container in the refrigerator for up to 2 days. Just gently reheat them in a skillet or microwave, but be careful not to overcook them again.
