- Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
- Step 2: In a large mixing bowl, combine the grated zucchini, applesauce, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Mix well until all ingredients are fully combined.
- Step 3: In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
- Step 4: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix, as this can make the bars tough.
- Step 5: If desired, fold in the chopped nuts, raisins, or chocolate chips for added flavor and texture.
- Step 6: Pour the batter into the prepared baking pan, spreading it evenly.
- Step 7: Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Step 8: Once baked, remove from the oven and allow to cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely before cutting into bars.
Notes
These bars are best stored in an airtight container at room temperature for up to 3 days. If you want to keep them longer, you can refrigerate them for up to a week, or freeze them for up to 3 months. Just make sure to wrap them well!
