- Step 1: Start by cutting the salmon fillets into bite-sized pieces. Pat them dry with a paper towel to ensure a crispy finish.
- Step 2: In one bowl, combine panko breadcrumbs, garlic powder, paprika, salt, and pepper. In a separate bowl, place the all-purpose flour. In a third bowl, add the beaten egg.
- Step 3: Dip each salmon piece first in the flour, then in the beaten egg, and finally coat with the panko mixture, pressing gently to adhere.
- Step 4: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Step 5: Place the coated salmon bites in a single layer in the air fryer basket. You may need to work in batches. Lightly spray with cooking spray to enhance crispiness. Air fry for about 8-10 minutes or until golden brown and cooked through, flipping halfway through.
- Step 6: In a small bowl, mix together mayonnaise, sweet chili sauce, and Sriracha. Adjust the Sriracha to your preferred spice level.
- Step 7: Once the salmon bites are done, remove them from the air fryer and serve hot drizzled with the Bang Bang sauce. Garnish with chopped green onions.

Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 350°F for about 5 minutes to regain that crispy texture.
