Ingredients
  

  • 2 cups Granulated Sugar Use less if desired for a less sweet option.
  • 1 cup Water Room temperature is sufficient.
  • 3 tablespoons Gelatin Unflavored gelatin works best.
  • 1 cup Fruit Juice Blueberry, cherry, and lime for red, white, and blue.
  • 1 teaspoon Lemon Juice Freshly squeezed is recommended.
  • 1/2 teaspoon Salt Enhances overall flavor.
  • 1 cup Corn Syrup Light corn syrup is preferred.
  • Red and Blue Food Coloring Use gel food coloring for vibrant hues.
  • For coating Granulated Sugar Use additional sugar for finishing.

Method
 

  1. Step 1: Combine 1 cup of water and 3 tablespoons of gelatin in a saucepan. Allow it to sit for about 5 minutes until it blooms.
  2. Step 2: Add 2 cups of granulated sugar, corn syrup, fruit juice, lemon juice, and salt to the saucepan. Stir well over medium heat until the sugar completely dissolves.
  3. Step 3: Remove the mixture from the heat and divide it into three separate bowls.
  4. Step 4: Add red food coloring to one bowl, blue food coloring to the second, and leave the third bowl uncolored (this will be the white layer).
  5. Step 5: Pour the red mixture into a greased 8x8 inch baking dish and let it set in the refrigerator for about 1-2 hours.
  6. Step 6: Once the red layer is set, pour the uncolored mixture over it and refrigerate for another hour.
  7. Step 7: After the white layer is set, repeat the process with the blue mixture, pouring it over the white layer and chilling until fully set.
  8. Step 8: Once all layers are set, cut the gumdrops into small squares or desired shapes.
  9. Step 9: Roll each gumdrop in granulated sugar to coat.
  10. Step 10: Store in an airtight container at room temperature.

Notes

Store in an airtight container away from direct sunlight. Can be refrigerated for longer shelf life, but may alter texture.
